Crock-pot chicken tacos

Crock-pot chicken tacos

3 chicken breast (boneless skinless)
1 packet of taco seasoning
Can of black beans drained
Can of corn drained
Enough chicken broth to keep the chicken from sticking

Throw it all in the crock pot and put on low. I did mine for about 6 hours. Yummy and fuss free. Enjoy!

Weigh in Wednesday

It's a day late again! One day I will get my stuff together! I have definitely gotten sick easier these past few weeks. I absolutely can't eat breakfast and lunch is a huge battle and then by 3 I am starving and feel like I could eat a whole cow. Most of the time by supper I eat one bite too many and regurgitate it all night. TMI?.. Oh's the truth.

Weight in Wednesday

198.0 I can definitely explain why I only lost 1 pound and that is because I made cookies one day. Then made cupcakes and ice cream on Sunday and I have pretty much been doing no exercise at all. I have become addicted to this tv show Breaking Bad and so I have been catching up on all the seasons on Netflix while the boys are at school! So there you have it........

Chili tortilinni

I tried a new Pinterest meal this week. It was super yummy. A change from regular old chili. You make your favorite chili recipe and just add tortilinni in it. Super easy and fast.

Weigh in Wednesday

This is a day late but I do not want to miss anymore of these because I will one day want to look back at my journey. So lets start with "I met my first goal!" Yay! I now am in the 100s. Whoop whoop. 199 to be exact! Haha. Holy moly it took me over a month to get over a plateau and I was starting to get discouraged! But I made it!!!!

Weigh in Wednesday

Not much has changed. Last week I had a 2 pound gain which is mainly because I ate like a mad woman and missed a fill. But this week I am back on track! I went to the doctor today and got a fill so hopefully that will help. I didn't meet my first goal by school but I hope to meet it by next Wednesday.

Olive Garden's Chicken Scampi

One of my favorite dishes from Olive Garden is their chicken scampi. The other day my mom and me went and ate there and of course chicken scampi is what I ordered. It looked pretty easy to make so when I got home I starting researching different recipes and seeing what they all had in common. Well....pasta, bell peppers and chicken was all that was in common. Some fried their chicken with a thick breading while others grilled. Some used white wine or cream. They all differed so I put all the good things together and came up with my own. 
Chicken Scampi
4 boneless skinless chicken breast
Italian seasoning
Olive oil
Heavy cream
Chicken broth
2 bell peppers
1 large purple onion
Lots of garlic
Angel hair pasta
I seasoned my chicken with salt, pepper and Italian seasoning and fried it in some olive oil. Then when it was done I removed it and put in my veggies and sautéed them a minute or two bc I like mine crunchy. Then I put in a cup of broth and maybe a half to 3/4 cup of cream. Bring to a simmer and add back your chicken. Then serve over your pasta. BAM that's it! And it was delish and my kiddos and hubby ate it. Another A+ for the recipe book!
